Sour Cream

Name: Sour Cream

Observation: Sour cream is a wonderful treat for potatoes and in baking.  Gives potatoes it a good flavor although, sour cream doesn't seem to have flavor per se.  Weird I know.  Who know that this treat came from bacteria and I imagine it should've been suspected because the word sour is in the name.  I found that sour is obtained by fermenting a regular cream by certain kinds of lactic acid bacteria. The bacterial culture, which is introduced either deliberately or naturally, sours and thickens the cream. Its name stems from the production of lactic acid by bacterial fermentation, which is called souring. The taste of sour cream is only mildly sour (wikipedia.org, 2011).
